Water Chestnuts

Water chestnuts are the underground stem of an aquatic plant that originates in Southeast Asia. They have a delicate flavour, a crunchy texture and are practically fat-free. Water chestnuts contain several minerals such as calcium, zinc, iron and potassium and are a good source of the B vitamin, folacin. Buy canned chestnuts and rinse well before using. Eat them alone - cold or heated - or add them to soup, toss them in a salad, or mix into rice.
