Squash Cake
by Marlyse Milburn, Milburn Projects, CA 3 cups grated zucchini
3 cups flour
3 cups sugar
1-1/2 cups cooking oil
1 teaspoon baking soda
2 teaspoons baking powder
4 eggs
1-1/2 teaspoons cinnamon
1 cup chopped nuts
Frosting
Preheat oven to 300 degrees. Combine all ingredients; place in a 9x13-inch pan and bake for 1-1/2 hours. Cool cake and frost.
Frosting:
1 3-ounce package cream cheese, softened
1/2 cup margarine
1 teaspoon vanilla
2 cups powdered sugar
Blend ingredients together.
