Crumby Chicken Strips
Crumby Chicken Strips Serve these golden-crumbed chicken strips with plum or honey mustard dipping sauce.


Large eggs
   
Cornflake crumbs 1  cup 250  mL
Grated Parmesan cheese 1/2  cup 125  mL
Lemon pepper 1  tbsp. 15  mL
   
Chicken breast cutlets (about 1 lb., 454 g), each cut into 3 equal pieces


Preheat oven to 425ºF (220ºC). Beat eggs with fork in small shallow dish.

Combine next 3 ingredients in shallow medium dish.

Dip each chicken piece in egg. Press both sides of each piece into crumb mixture until coated. Place on greased baking sheet with sides. Spray top of chicken pieces with cooking spray. Bake for about 15 minutes until no longer pink inside. Makes 12 chicken strips. Serves 4.
