Egg And Cheese Burgers

A hint of spice from the hot pepper sauce makes this colourful egg burger a perfect choice for lunch or supper.

Thinly sliced onion

Hard margarine (or butter)

Large eggs

Process Cheddar cheese slices

Kaiser rolls, split and toasted (buttered, optional)

Barbecue sauce

Medium tomato, thinly sliced

Avocado, pitted and thinly sliced

Hot pepper sauce

Heat cooking oil in large non-stick frying pan on medium. Add onion. Cook for 5 to 10 minutes, stirring often, until softened. Remove to small bowl. Set aside.

Melt margarine in same frying pan. Break eggs into pan. Gently break yolks. Cook eggs on medium until set. Remove from heat.

Lay 1 cheese slice over each egg. Cover. Let stand until cheese is melted.

Spread barbecue sauce on bottom half of each kaiser roll. Top each with 1 egg.

Layer onion, tomato and avocado over eggs. Drizzle with pepper sauce. Cover each with top half of roll. Makes 4 burgers.
