Lean Chef’s Salad

Eat enough of this salad and you’ll be a lean chef too! Consider it a full meal deal with plenty of meat, cheese and eggs.

Chopped or torn romaine lettuce, lightly packed

Green onion, sliced

Cherry tomatoes, halved

Fat-free Italian dressing

1/3 cup

Pepper, sprinkle

Diced light medium Cheddar cheese

No-fat deli ham slices, cut into thin strips

Lean deli smoked turkey breast slices,cut into thin strips

Large hard-cooked eggs, chopped (see Note)

Fat-free Italian dressing (optional)

Put first 3 ingredients into large bowl. Drizzle with first amount of dressing. Sprinkle with pepper. Toss well. Arrange on 2 individual serving plates.

Arrange next 3 ingredients over lettuce mixture.
|
Sprinkle eggs over top.
|
Serve with second amount of dressing on the side. Serves 2.

Note:
: Reserve 1 cooked egg yolk before chopping eggs. Use to garnish assembled salads by pressing egg yolk with a spoon through a sieve held over the salad.
