Smoked Salmon and Brie Frittatas
Smoked Salmon and Brie Frittatas Make it a meal with small potatoes in chive butter, and steamed asparagus tossed with toasted sliced almonds and lemon juice.


Large eggs, fork-beaten
Smoked salmon, coarsely chopped 6  ounce 170  gr.
Brie cheese, chopped 3 1/2  ounce 100  gr.
Chopped fresh dill 1 1/2  tbsp. 25  mL
Capers, finely chopped 1 1/2  tbsp. 25  mL
Freshly ground pepper 1/2   tsp. 2  mL


Combine all 6 ingredients in large bowl. Fill 8 greased muffin cups with 1/3 cup (75 mL) salmon mixture. Cover with foil. Bake in 375°F (190°C) oven for 10 minutes. Remove foil. Bake for further 10 minutes until set. Let stand in pan for 2 minutes before turning out onto serving plates. Makes 8 frittatas
