Shortbread

A favorite, no-fail recipe for shortbread.

All-purpose flour
|
2 cups

500 mL

Icing (confectioner’s) sugar
|
1/2 cup

125 mL

Butter (not margarine), cut up
|
1 cup

250 mL
|
Combine flour and icing sugar in large bowl. Cut in butter until mixture resembles fine crumbs. Press mixture together to form smooth ball. Press evenly in ungreased 9 x 9 inch (22 x 22 cm) pan. Prick entire surface of dough with fork through to bottom of pan. Bake in 300°F (150°C) oven for 50 to 60 minutes until just golden. Let stand in pan on wire rack for 5 minutes. Cuts into 36 squares.
