Peter Pumpkin Loaf

Keep this recipe in mind when you’re wondering what to do with that leftover pumpkin flesh. Loaded with Vitamin A, this bread is great to serve as an after school snack.

flour
|
2 cups
|
|
|
baking powder
|
2 tsp.
|
|
|
salt
|
1/4 tsp.
|
|
|
cinnamon
|
1/4 cup
|
|
|
ground ginger
|
1/4 tsp.
|
|
|
pinch ground cloves
|
|
|
|
pinch grated nutmeg
|
|
|
|
baking soda
|
1/4 tsp.
|
|
|
brown sugar
|
1 cup
|
|
|
shortening
|
1/3 cup
|
|
|
eggs
|
2
|
|
|
fresh or canned pumpkin
|
1 cup
|
|
|
2% milk
|
1/4 cup
|
|
1. Mix together dry ingredients. Set aside.
|
2. Cream shortening and sugar.
|
3. Add one egg at a time to sugar mixture, beating each time.
|
4. Add pumpkin and milk to egg mixture.
|
5. Add dry ingredients to pumpkin mixture and stir until just smooth. Pour into greased
loaf pan.
|
6. Bake in 350 F oven for 1 hour or until tester inserted in center comes out clean.
|
